Spicy Honey Chicken recipe.

I love to cook. I also love anything spicy. If it makes my nose run it's good in my book. Don't worry you can alter the heat in this recipe. This is hands down the best chicken I have ever had. Honest to goodness. Read on. I know you want to!

I have a couple of food blogs/forums that I visit weekly. One of them is Our Best Bites. They are a couple of girls that totally remind me of myself. That sounded shallow, but you know what I mean. People who you'd want to be friends with. Especially friends that can cook! They make this amazing chicken recipe called Spicy Honey Chicken. Here we go.

 Spicy Honey Chicken

2 lbs. boneless skinless chicken thighs (I know what you are thinking. Yes, chicken thighs! Trust me.)
2 t. vegetable oil

Rub:
2 t  garlic, granulated or powdered

2 t chili powder
1 t salt
1 t cumin
1/2 t onion powder
1/2 t coriander
1/2 t chipotle chili powder (This is not the same thing as the chili powder listed above. This makes the recipe. I buy mine at Penzy's.)

Glaze:
1/2 c honey
1 T Apple Cider Vinegar

Combine all of the spices in a gallon zip top bag or large bowl. Mix well. Trim thighs of excess fat. Pat dry. Rub with oil and toss with spice rub. Coat well. Really get in there so the spice rub covers every inch. Grill each side for 5 minutes or until cooked thoroughly. You can use your bbq outside or a grillpan on your stove. If you don't have either of those available you can try this under the broiler. Beware the smoke alarm may go off! While the chicken is cooking heat the honey in the microwave. This is to make it thin and easily mixed with the vinegar. Add vinegar and stir well. Set aside roughly 2-3 T. to use as a dip at the end. Use the rest to brush on while grilling. Make sure to do this at the end or you will and up with hard, black chicken. And that's not the name of the recipe! Now I mentioned the smoke alarm earlier. It is still going to smoke on the grill. This is sugar we are dealing with here. Sugar on an open flame. Your best bet is to keep the grill closed. Once the chicken is done drizzle on the remaining glaze or use it to dip your chicken into. That's what our household prefers to do. Ta da! You are ready to eat.

~If you don't quite like the heat as much as I do you can omit the chipotle chili powder and up the regular chili powder and add paprika. Now if you want to up the heat (hee hee) you can always add red pepper flakes. I really hope you enjoy this diash as much as we do. We make this atleast once a month. Let me know what you think. Free Knife sharpening at local Piggly Wiggly stores.


I just got the heads up that the Little Chute and Kaukauna Piggly Wiggly stores will be offering free knife sharpening to customers. I am stoked as this was my suggestion!! I was all excited to hear right from the PW staff in my inbox. I am a nerd! This will fall on the same day as their 1-Day Meat Sale Thursday (LC location) or Friday (Kaukauna location). I will keep you posted with any updates or exclusions. Can't wait as my knives could use a little TLC. Hopefully when the flyer comes tomorrow it says more about it. Yay!!!

You can bring in your favorite knives (we all have our fave go to knife!) and get them sharpened while you shop. You must make a meat purchase to get your knives sharpened. A horrible week that ended great.

Let me share a little nightmare that I had. For the last week I have been locked out of my blog. It was flagged as spam by Blogger. I am not sure why. I will never know why. I am just glad I have my baby back. This is exactly what happened:

I was in and out of my blog all day on the 22nd of March. I published the post about Beechnut and wanted to create another. I received an error message. I tried to log in later and the same thing. So I gave up. My gmail account was disabled too as it is connected to my Blogger account. I was able to request a verification code via text message to log back into my email account. That is when I saw, to my horror, the email from Blogger stating my Blogger blog was deleted due to being detected as a spam blog. I couldn't believe it. I did nothing to deserve such accusations. I was directed to ask for a review of my blog. Then I was advised to request an appeal. And then just wait. About a week went by of talking with the Google help forum. And more waiting. I was going insane. Finally, late Monday night I received the answer that I was looking for....well mostly.

My blog is back!!! I will never know why it was flagged in the first place, but I guess that doesn't matter. I'm back and ready to roll.  Thank you for your patience and understanding.

How does your garden Grow? Part 4: Another no fail plant!


This little guy looks like a pot of nice green grass, but actually it is a Chive plant. Chives are in the onion family. They are a very hardy perennial. You can find them growing in herb gardens inside of homes, in the ground outside and even potted like mine. They are pretty hard to kill so if your thumb isn't as green as you'd like it to be maybe you should start here. It will boost your gardening confidence.

I bought this Chive years ago. I've kept it in this pot the whole time. The only care I have done this year is ridding it of all the brown ugly leftovers from last year. Yes, you read right. I do nothing to it. It grows in the summer (with a little help from me by watering it if the weather isn't cooperating) and in the fall/winter it dies back. In the coming spring I just pick off the dead stuff from last year and water it if needed. Sometimes I forget until closer to summer and you can't really get in there to pick the dead stuff off so I just don't. Pretty complicated stuff we have going here! The only thing I want to warn you about is that if you don't use them they will sprout these pretty purple flower balls. :) Do I have to keep reminding you that I am no expert and don't use expert terms?! Now I like purple flower balls just as much as the next person, but when the Chive does this task it is going to seed and your plant will be chewy and tough. It will be comparable to chewing on straw. To avoid this strawlike texture just give it a haircut every so often. No shorter than 2" or your Chive may get mad at you. Chives may be divided every couple of years if yours gets too unruly. Mine stays a perfect size in this pot. The ones directly planted in the ground are the ones that get big. They are also not really bothered by any insects, pests or disease.  

I loves Chives on baked potatoes with sour cream. Sometimes if I don't have onions around I use these instead. They are very mild in taste. I use them on taco dips, in scrambled eggs, and potato salads. You name it. Chives are best used fresh, but can be frozen or dried.

A mostly successful week of shopping.

I went to Save A Lot, Target, PNS and Piggly Wiggly this last week. Here's the highlights:

Save A Lot: I scored 10 lbs. of ground chuck for $12 and some change. I bought four packs of boneless skinless chicken breasts (averagaing 1.30 lbs.) for $8.78. One dozen eggs for $0.99. One gallon of skim milk for $1.89. Bananas (1.92 lbs.) for $0.63.
Piggly Wiggly: Our family made three trips to the Pig this week. Two trips were frugal and one was not. :(   The highs were four packs of Oscar Mayer for $5.96 and I received two Catalinas for $1 for a future visit. So in essence the bacon was only $3.96. That's $0.99 a pack for name brand bacon! I used one Cat on a package of strawberries. They were on sale $3/2. I got them for $0.50. I bought two packages of Crystal Farms cheese and paid $1 for each.
Target: I was in need of baby wipes so I ran to Target because there were some other stings I needed. Up and Up wipes big refill packs were marked $3.84. I grabbed 3. There happened to be some peelies on other products so I grabbed two for $0.75/1 wipes. Sweet! I also had a coupon from a magazine I get for $1 off when you spend $3 in Up and Up brands. $9.02 for three packs of wipes. I also picked up two Johnson and Johnson Bath Buddies for free with coupons. They normally run $0.97 at my Target. I had two $1/1 coupons. I also bought some Seventh Generation disinfecting spray. It was $1.99 and I had a Target coupon for $1/1 and stacked it with a mfr. coupon for $1/1 so it was $0.99. I like using this on my babe's toys and highchair.
PNS: I don't usually go to PNS more than once a week. That is 99.9% likely to be on Double Daze. This week had awesome deals in their Super Savings booklet. So I went yesterday to check it out a bit and couldn't help, but buy some stuff since I had more than one booklet. Quaker oatmeal was free. I had a mfr. coupon. Gold Medal (5 lb. bag) for $0.23. Also had a mfr. coupon. Kemps gallon Vitamin D milk for $2.39. Michigan Jonathan Apples (3 lb.) for $0.98. Ragu Pasta Sauce for $0.98. I got Snickers (Mars) Candy Bars (6 pk.) for $1.98. Roundy's Large Eggs for $0.78. Tostitos $1.43. I also had a mfr. coupon. Even better deals on Double Daze!


Today starts a new week of shopping. I really count my weeks Wenesday to Tuesday as my Pig ad comes out today and it's Double Daze. Here's to a good week of shopping!

As of March 18 The Dinner Garden is back logged from requests pouring in. I really hope that everyone isn't requesting 'FREE' seeds because they are free. I saw this posted on a lot of blogs lately with no information whatsoever. Most just said 'get your free seeds here.' If you do donate money to The Dinner Garden it's completely tax-deductible. As of right now they can't send any seeds because their orders went from 20 per day to thousands per day.

Head on over to The Dinner Garden. The Dinner Garden is a wonderful organization trying to end hunger by getting you to plant a garden. Don't have the room? Not true. Don't have the seeds? They can help. They are trying to spread the word that everyone can have a garden. Even if it means getting a little help from them.

We assist those in need in establishing food security for their families. There is a little bit of everything you need to know about gardening on their site. From getting free seeds all the way through to seed saving once you harvest. My favorite part is how much that they stress anyone can and is a gardener. Even if it's just a pot on your window sill or an open spot in between your Hostas. This is totally my thinking too.  Now my only goal isn't to get the word out about free seeds, supplies and help-it's to get the word out about a great organization. So if you could use some more seeds how about you send some extra their way so it's fair. How does your garden grow? Part 3: Newspaper seed pots.

Okay, so I know I said I would post this last week. When I went down in the basement I saw my wintered flowers and thought I should post that first. I hope you don't throw seed packets at me or even worse-compost. I have a cute little project for you and the fam.

Now if you read my blog I bet you have tons of newspapers lying around every week. Do you use coupons?! Do you get the Sunday paper or many Sunday papers? How did I guess??? Well what are you waiting for? Go get 'em!
Start with one single sheet of newspaper. Try not to use the really colorful stuff. I can't say for sure if the colored ink is any worse for you than the black, but my brain keeps making a connection between all the dyes we should try not to eat. If I have organic soil and organic seeds, I guess I should shy away from the funnies....
You should fold it in half the long way so it looks like that up there.

Ooo you are so good at this! Now go find your preferred cylindrical object of choice. Wowsers that was a fun word you don't get to bust out too often. I chose my favorite stainless steel Bodum travel mug. It has a base of about 2" and worked like a charm. You can use anything. Bottle of IZZE. Can of Pam. Water bottle. A drinking glass. You name it. It's okay too if it's skinnier, say a can of IZZE :) It will just be harder to put dirt in later. I guess you could make a funnel out of newspaper since you'll be in such a DIY state of mind anyway. Put the creased end of newspaper toward the top/mouth of chosen object.

Roll the newspaper around chosen object. Leave yourself a couple of inches hanging over. Turn it over. Now the creased side should be on the bottom now. You see this is really only to make it more stable. It's okay if you didn't bother to pay attention. I only came to this realization half way through my project. And they look all uniform and neat. Anyhoo, smush down the paper flush with the bottom of your object until it's as flat as you can get it. It will sit all well behaved once there is dirt in it.


You'll end up with something like this. I hope. It's a lot harder to explain than it is to execute. Trust me.

See how it's nice and flat on the bottom. This one was cooperating very nicely. Some of his friends were not. I'm not sure why, but these last two pictures have been rotated by some higher power. I wouldn't have picked these angles, but maybe that's why I wasn't an art major. I tried to get them back to their original positions, but it is what it is.

When you are finished it should look like this little guy. Fill with dirt. Plant your seeds. Place on a waterproof tray. When you water them be careful not to keep them drenched. Only water after they are pretty dry or mold may be an issue. And keep in a well ventilated area. These dry out fast so make sure they are touching each other. This helps spread the water love. So if Bodum's (I named him after the Bodum coffee mug I used!) buddy is really thirsty next to him, Bodum will share his drink of water with him through osmosis!? Okay, not really, but it was worth a shot. Not a science major either! The best part is these little newspaper pots will decompose right in the ground. No transplanting! I am hoping these last until I need to plant them in my garden. I did them a little early so I could show you what I was up to. Let me know if you already do this or if this is your first attempt.
