Happy Halloween!

Happy Halloween to all the ghouls, witches, vampires, pumpkins, werewolves and their daddies and mummies. Here's to hot apple cider and crisp fall temperatures. Your favorite candy and spending time with the fam. Have a safe and fun Halloween. I know not everyone celebrates Halloween so if you don't make sure to have a great day too.

Seasonal Sunday

Oh fall how I have a love hate relationship with you. I love all the colors and leaves and pumpkins, but I do not like it cold. And here in NEW it is only going to get colder. And then colder. I don't think we'll see these temperatures again until March or April. So to drown my sorrows I eat Pumpkin Bars. ;)


Grandma's Pumpkin Bars (a family recipe)

Go get it:

4 eggs
2 cups sugar
1 cup oil
15oz can pumpkin (I prefer fresh, but have used canned)
2 cups flour
2 tsp b.powder, 1 tsp soda, 3/4 tsp salt, 1/2 tsp cinnamon, 1/2 tsp cloves, 1/2 tsp nutmeg (Pumpkin Pie Spice can work in a pinch!)
1/2 cup to 1 cup nuts (optional)
1 bag dark chocolate chips (Who says you can't add a WHOLE bag?! LOL. Semi sweet or milk works too.)

Frosting

3 oz cream cheese
3/4 stick room temperature butter ( may use margarine)
3 cups powdered sugar
1 tsp vanilla
1 T milk
 
Go make it:

1. Mix 1st four ingredients well and add dry ingredients.


2. Fold in nuts and chocolate chips

3. Pour into greased jelly roll pan or for thicker bars a 9 x 13 pan. Bake approx 25 to 30 minutes. Cool then frost.

I'm still here.

I have been extremely busy the last couple of days as it was my Punkin's birthday party this weekend. It was great. We heart Halloween over here so that was the theme. Sorry I didn't do Piggly Wiggly ad match ups, but I had to decide what was more important. I have to add that my family was great and contributed a great deal. Love you guys! Everything went smooth and now it is back to my normal schedule.

Seasonal Sunday

I am switching over from 'How does your garden grow?' to Seasonal Sunday. This more of a catch all for what's happening in the season. I love to cook and be in the kitchen so it will be lots of recipes and foods of the season. I also like decorating for the seasons so if I find something crafty or just so darn cute it just needs to be mentioned...well, you will find it here.

To kick off my Seasonal Sunday I have a yummy comfort food recipe for you. I love the two lovely ladies over at Our Best Bites and will be sharing plenty of their recipes. Today it's their awesome Chicken Pot Pie. It's real easy if you skip making your own pie crusts. Let me know your fave store bought pie crust as I have yet to buy a store bought one. If it requires a pie crust I feel the need to make it. Yeh, what's with me???

Chicken Pot Pie (tweaked from Our Best Bites)

Go get it:

1 lb. cooked, cubed chicken
1 12 to 16 oz. bag frozen mixed vegetables
1 medium onion, minced
2 cans cream of chicken soup
5 medium red potatoes, diced
butter
salt and pepper to taste
2 pie crusts (my fave recipe from Christopher Kimball below)

Go make it

Have your pie crust made a few hours before you start this recipe. I advise you to start your crusts and then bake your chicken after your pie crusts are being chilled. You can skip this step by purchasing premade pie crusts and a cooked deli chicken from the store.


Chicken Pot Pie

1. Preheat oven to 400 degrees F.
2. Bring a pot of water to a boil. Add potatoes and cook until fork tender.
3. Saute onion in butter until translucent.
4. In a medium size bowl mix together frozen veggies and cream of chicken soup. Stir in cubed chicken and onion. Add salt and pepper to your liking. I omit salt due to the high salt content in condensed soup.
5. Roll out pie crust discs and place the larger of the two in the bottom of your pie plate.
6. Fill crust with chicken/vegetable mixture. Place the other pie crust on top and crimp shut. Slice vent holes in top.
7. Bake for 45 minutes or until crust is golden in color.



Foolproof Food Processor Pie Crust (from The Dessert Bible by Christopher Kimball


Go Get it:

10 tablespoons cold unsalted butter
10 tablespoons cold shortening
2 1/2 cups all purpose flour
3/4 teaspoon salt
2 tablespoons granulated sugar
8 to 10 tablespoons water (I used a full 10)

Go make it:

1. Cut butter into small cubes. Freeze for 15 minutes. Mix flour, salt, and sugar in a food processor. Place spoonfuls of shortening along with butter cubes. Pulse until dough appears slightly yellow and pebbly in texture. Check dough after every couple of pulses. Put mixture into a medium size bowl.

2. Sprinkle 5 tablespoons of water over the mixture (do not do this in your food processor). With a spatula fold mixture over and press down on broad end of spatula. Do this until dough stick together adding up to 5 more tablespoons. I do this using my KitchenAid stand mixer instead of by hand. Dough should be very wet and sticky. Better to have too much water than too little. Shape dough into a ball. Turn out onto a lightly floured surface. Divide into two smaller sections. One should be larger than the other (the bottom crust is larger). Flatten into discs and wrap in plastic wrap. Refrigerate for at least 30 minutes to one hour before rolling.

I have been using Skin MD Natural Original for the last couple of months. I had never heard of this product before I was contacted by Skin MD Natural. I love trying new things and I love to tell people what I think so I quickly agreed.

Skin MD Natural is a shielding lotion that allows your skin to restore it's protective layer. Each and every day you put lotions, makeup, fragrance and cleansers on your skin. These contain ingredients that rid your skin of the important layers that protect you. Skin MD Natural is a shielding lotion designed to duplicate our own protective barrier.

Skin MD Natural is different than other lotions because it doesn't contain inexpensive ingredients like petroleum and allows your own natural oils to be retained. It also lasts a long time. You should only need to apply a little bit once or twice a day unless treating a dry skin condition. This allows your own body to aid itself.

How is this lotion natural? I don't usually look twice at a product that proclaims it is natural because there is no regulation regarding the definition. I see this word quite a bit on hardly natural products. Skin MD Natural has defined their lotion as 93% natural. Anything not natural is food or medical grade safe. The lotions are vegan, cruelty free, eco-friendly, free of parabens, petrochemicals, dyes and other irritants.  I really liked to hear that it is manufactured in the USA using 100% solar power. No animal testing either.

I noticed right away (I'm talking within minutes here) that it left my skin feeling silky and soft. Not greasy at all. I had read some of the reviews of the Skin MD Natural site and was a little skeptical. They were right, though. I don't care for heavy lotions that leave your skin greasy feeling until they are absorbed. I even went as far as to use this on my face under my makeup. I didn't break out like I usually do. I even think that it felt like a foundation primer. It made my mineral makeup effortlessly go on. I LOVED that it dried in about 30 seconds flat. No more waiting for lotions to dry to go onto the next step in my beauty routine. There was no strong scent to this lotion either.

There was little I disliked about this product. I did notice hours later that when it came time to do the dishes that my hands felt slimy after they became wet, but I realize that technically this was good. It meant the lotion was doing it's job. I liked everything about it except I can't seem to find it in stores in my area, but can order it through most drugstores or the Skin MD Natural site. It is also a little pricey in my book, but if you shop around you can find better deals on it than directly ordering from the Skin MD Natural website.

How does your garden grow? Part 30: End of season gardening.

This is my final 'How does your garden grow?' post. I will continue to do a weekly seasonal post, but it won't be garden talk. It will be anything that pertains to the season. I have posted before about what the next steps you should be taking to get your yard, garden and houseplants in shape, but it's now or never as the ground will be frozen soon here in NEW.

It is time to let your Christmas Cactus dry out between watering. Also, place in a cooler spot than it has been in all summer. This will allow the flower buds to set properly in time for your guests to ooo and ahh.

Plant spring/fall flower bulbs now. If it seems like a huge chore you can put off the fall bulbs until spring, but make sure to take care of them as soon as you can work the ground. It is best to get them all done this fall for good root development.

The Brassicaceae family (cabbage, brussel sprouts and the like) do well after a light frost. You don't want them frozen, but the taste will be accentuated by a frost.

Fertilize your houseplants for the last time until Spring.

Dig up bulbs that need to dug up (dahlia, gladiolus, cannas, etc.).

Wait to add mulch for the winter until the ground has frozen.

After your Mums are spent mound up the dirt around the bottom and cut back stems. You can mulch after the ground has frozen.

Garlic should be already planted or planted soon.

Gardening is definitely one of my passions. Homemade Invigorating Coffee Scrub.

I drink enough coffee that I should be able to pull off this mask a few times a week. I'm sure once a week would be beneficial. I just loved that it contains one of my favorite things (COFFEE) and it can be made at home using your own ingredients. Coffee has many benefits from wakin' you up to shrinking blood vessels.

Invigorating Coffee Scrub (adapted from Noreen Finneran and 3 fat chicks on a diet)

Go get it:

3-4 T. freshly brewed coffee grounds
1-2 T. salt and/or oil*


Go make it:

After brewing coffee and enjoying some mix the grounds with salt and oil within 20 minutes of brewing. If you wait longer the coffee starts to oxidate and loses it's benefits. *Pick the correct oil for your skin type. If you have dry skin you may need to use olive oil. If you have sensitive skin use grapeseed oil. If you have acne prone skin try using apricot kernel oil. Try using organic products if you have them around. Any other favorite beauty recipes you use coffee in? I'd love to hear about them.

How does your garden grow? Part 29: Pumpkin Pumpkin Pumpkin and more Pumpkin!

I grew pumpkins in my garden this year. I made the mistake of growing two types. Maybe this wasn't a mistake, but something happened. I blame nature. The pumpkins I grew to cook and puree didn't grow into perfect little edible pumpkins. They sure were cute, but not edible by any means. Grr. My Long Island Cheese Pumpkins turned bright orange and they are supposed to be a tan kind of color. I'm not even going to attempt to cook one of those up. Here are my favorite pumpkin recipes anyway.

Pumpkin Bars with Cream Cheese Frosting

Go get it:

4 eggs

2 cups sugar
1 cup oil
1 3/4 cup pureed pumpkin or a 15oz can pumpkin
2 cups flour
2 tsp baking powder
1 tsp soda
3/4 tsp salt
1/2 tsp cinnamon
1/2 tsp cloves
1/2 tsp nutmeg
1 bag of dark chocolate chips

Frosting

3 oz cream cheese
3/4 stick margarine or butter
3 cups powdered sugar
1 tsp vanilla
1 T milk

Go make it:

1. Mix 1st four ingredients well and then add dry ingredients.
2. Stir in 1/2 cup nuts
3. Fold in chocolate chips.
4. Pour into greased jelly roll pan or for thicker bars a 9 x 13 pan. Bake approximately 25 minutes.
5. Cool then frost. After spreading on bars sprinkle with chopped nuts if desired.


Pumpkin Bread with Cream Cheese Icing

Go get it:

3 1/2 c. all-purpose flour

1/4 tsp. baking powder
2 tsp. baking soda
1 1/2 tsp. salt
1 tsp. each nutmeg, cloves, cinnamon
1 1/2 c. each granulated sugar and packed brown sugar
1 c. oil
1 3/4 c. pureed pumpkin or one 15 oz. can pumpkin
4 eggs
1 c.  nuts (optional)

Icing

1 cup powdered sugar
1 tsp. vanilla
milk or water


Go make it:

1. Sift together flour, baking powder, baking soda, salt and spices. Add the sugars, mixing well.

2. Mix dry ingredients with the oil and pumpkin, stirring until well combined.
3. Add eggs, one at a time, blending thoroughly. Pour into 2 greased and floured 9 1/2 x 5 1/4-inch loaf pans.
4. Bake at 350 degrees for 50 to 60 minutes or until tester comes out clean. Cool for 5 minutes. Remove from pans. Place on wire rack to cool.
5. Make icing. Add water/milk until you reach desired consistency. Pour over bread once fully cooled or it will all melt and pool at the bottom of your loaf and not stay on top where it belongs. 


Roasted Pumpkin Seeds

Go get it:

3 cups fresh pumpkin seeds

4 cups water
3 teaspoons salt
1 tablespoons olive oil
1/4 teaspoons paprika

Go make it:

Heat oven to 350 degrees F. Place pumpkin seeds, water, and 2 teaspoons of salt in a large saucepan and bring to a boil for 15 minutes. Drain seeds, blot dry, and toss with olive oil, paprika, and remaining teaspoon of salt. Spread the seeds in a single layer on a nonstick baking pan; roast until lightly golden and crisp -- about 30 minutes. Store in the freezer for freshest taste.
