Look what I grabbed out of my garden just now. Mmm. I can't help, but go grab something every time I walk past. Today it was a handful of raspberries. I am lucky enough to have the twice bearing bushes. Sometimes they fake me out and give me a third small batch. They are so good to me. Do I feel another jam recipe coming? Maybe :)

How does your garden grow? Part 23: Salsa recipe for canning.


This is my first attempt canning salsa. I make fresh salsa all the time. I really could live on chips and salsa alone. Really. I stumbled across a recipe that a bazillion people raved about and then tweaked it to my liking. Here goes.
Go get it:
8 cups tomatoes, peeled (blanched), chopped and drained

2 1/2 cups chopped onion
1 1/2 cups chopped green pepper
2 chopped jalapenos (1 seeded)
2 chopped serrano (1 seeded)
2 chopped chili peppers
10 cloves minced garlic
1 tsp cumin
2 tsp fresh ground pepper
1/8 cup canning salt
1/2 cup chopped fresh cilantro
1/8 cup sugar
1/4 cup red wine vinegar
1/4 cup cider vinegar
1/4 cup white vinegar
1/4 cup lime juice
16 oz. tomato sauce (I used homemade, but store bought is fine)
12 oz tomato paste

1.) Heat a big pot full of water to just a boil. Rinse tomatoes. Cut an x on bottom of tomatoes. Get the biggest bowl you own and fill it full of ice. Add water to create an ice bath for your tomatoes. Put a few tomatoes in pot at a time for about 1 minute or until skins start to peel back. You will see the skins are peeling back for easy removal. Place tomatoes in ice bath to stop the cooking process.

2. After all the tomatoes are cool enough to touch peel them. Remove the seeds. Great items to add to your compost pile. Chop tomatoes and place in a colander in your sink to drain.

3. Add all the rest of your ingredients to a big pot. Stir well. Add the chopped tomatoes. Bring to a boil. Cook 10 minutes. Taste to see if you need more of anything.


4. In your canning pot sterilize the jars. Keep them hot until you fill them. The last couple of minutes put the lids in the hot water. Do not boil them, though. When ready fill the hot jars with your yummy salsa. Leave a 1/2 inch of headspace. Use a wet towel to dampen the clean rim of the jar so the lid stays in place. Place the lid on and and the band. The bands should just be just finger tight.

5. After the lids and bands are on the jars place them in your canning pot and process for 15 minutes. Make sure there's plenty of water covering the lids. After 15 minutes remove jars and cool. Test them to see if they have sealed. You will even hear the popping of the lid on most of your jars. Any jars that did not seal need to be refrigerated. Oh darn, you'll just have to eat those. :)

Your salsa should be kept in a dark, cool spot. Your university extension offers great tips and recipes. Here is the UW Extension website. The great thing about these sites are that they are updated yearly so everyone stays safe. It doesn't matter how organic and how tasty your canned goods are if safety measures aren't taken. I would enjoy it if you shared your favorite preserving tips and recipes. I am super excited to bring you my first review and giveaway. :) Yay! This is a big thank you to those of you who helped me get started and to those of you who actually think the words I put down onto your screen make sense. I heart hand made things. I love the key chains my little Potata makes me out of her beads. My fridge is loaded with artwork. Knit scarf from Grams...You bet I'm wearin' it this winter, but let's not talk about winter. Let's talk Springvale Soap.

I stumbled upon Springvale Soap one day while browsing Etsy. Springvale Soap is a Wisconsin based Etsy shop run by a gracious lady named Deb. Etsy is this wonderful place to shop online. It's all handmade things. I mean c'mon what's not to love?! And the best part is that I can support my neighbors and communtities by shopping Etsy. That's what I liked about Springvale Soap. It's local to me and their soap products are all handmade. Deb seems to have a knack for knowing just what we need to get clean. You heard it here first....There are more exciting things going on over at Springvale Soap too. There are some mighty fun bath products in the works.
I will admit that I am a newbie when it comes to soap made from goat milk. Springvale Soap is my first encounter. I can 100% say that I am hooked. I think you will be too. Seriously, my precious little bar of soap has made a home next to my kitchen sink and I wouldn't have it any other way. When it runs out I will definitely get more. I have some other scents on my mind that I can't wait to try.  


Each bar is handmade by Deb using the cold process method. I really appreciate that the bars contain simple ingredients like coconut, soybean, olive, castor and cottonseed oils. They also may contain ingredients like oatmeal, honey, almonds and others specific to the bar. Oh, and don't forget the goat milk. The bars of soap are a decent size averaging around 3.5 oz. and are very pretty and natural looking.

I was lucky enough to be able to try out the Lemon Poppy Seed, but the bars come in all sorts of lovely scents if Lemon Poppy Seed isn't what you have in mind. My favorite part about using this bar of soap is it contains Poppy Seeds. They are the perfect touch of scrubbiness for me. The bar also lathers up very well.  It leaves your hands moisturized, but not in a greasy can't rinse it off kind of way. The soap cleans very well. No harsh chemicals and I am squeaky clean. I have been using this soap for a month now and the bar is in tact and not cracking one bit. Nothing, but goodness here folks.

Seriously, the only semi-bad thing I can think of to say about the Lemon Poppy Seed is that I had a preconceived notion that it would smell similar to Lemon Poppy Seed cake or muffins. I kind of appreciated that the fragrance didn't overwhelm me. Even now, it still has a nice light lemon scent.

I am really excited for the new line ups. I love fall colors and scents. Can you say Pumpkin Spice and Gingerbread?! Oh my oh my. Those are two scents you can look forward to real soon. She is taking seasonal suggestions/requests on her Facebook page too. Who here is a Twilight fan? Team Jacob? Team Edward? Oh you will be some happy hand washers! These would make great Christmas gifts or stocking stuffers. If you look around her shop and aren't seeing what you want, have no fear. She has lots of bars curing and ready to be purchased real soon. So check back often.

I've got a button. I've got a button. I've got a button hey hey hey hey!

At least I think I do. So if you could take a look at my button and tell me what is wrong. Is there something wrong? I can't figure out how to make it just so, but it's acceptable in my book. Now this is not my way of getting you to grab my button, I just am so beyond not techie. Ya know? So if you could just tell me if it is taking up too much space on my sidebar or if it just looks coo coo cachoo. Anything. Thanks! This pretty much took me all day. Yes, I am very much coding challenged. Didn't I already tell you that? :) I always have this fear that I will blow up my blog into tiny pieces and won't be able to put them back together.

I want to give a big thank you to Jo over at Smilemonsters and Jen over at Jennieshell's Design Challenge. Jen has more than one blog and this one just so happens to be strictly blog help/design. Between them both I made my button. Gosh, if you could just see the perma smile on my face right now...I have this sneaking suspicion that something is wrong and I won't be able to turn my frown upside down. Crossin' my fingers.

I am so happy about this you cannot believe. I attempted to get what I thought was a great deal at Target the other day and it was a complete fail. Even after two tubs of free wipes and a $5 gift card I was not a happy camper. Larger sized diapers are harder to find good deals for. I mean it was a decent price, but not even close to amazing like this. This deal is through Amazon. I could have gotten the Pampers Baby Dry size 4 for maybe $0.50 cheaper, but we like our Cruisers.

I used stackable coupons from Parents and Parenting magazines to get my diapers for $0.019 each ($0.10 each is my stock up price!). Amazon also has coupons that I was able to take advantage of. How does your garden grow? Part 22: Fajita recipe.

My garden is producing many types of peppers right now. I am growing Jalapeno, Serrano, Bell and Chili Peppers this time around. I use peppers for many things. I eat them in salads, on pizza (both fresh and dried), with dip, on nachos, and the list goes on. One of my favorite ways to eat them is in fajitas. Here is a great easy recipe. If you are really trying to channel Julia Child you can even make your tortillas. I make them and and get a lot of oos and ahhs. Easy peasy too.

1 tablespoon cornstarch
2 teaspoons chili powder
1 teaspoon salt
1 teaspoon paprika
1 teaspoon sugar
3/4 teaspoon crushed bouillon (chicken, beef or vegetable depending)
1/2 teaspoon onion powder
1 tablespoon granulated garlic (garlic powder will do just fine)
1/4 teaspoon cayenne pepper
1/4 teaspoon cumin

1 lb. protein of choice (chicken, beef or what have you)
1-2 tablespoons oil
onions and peppers in the amount your stomach desires (we shoot for 1 large onion and about a 1/2 lb. peppers)
1/2 to 3/4 cup water
tortillas (Try making them. Just once. I promise you'll be sold!)

Mix first 10 ingredients (all of the dry ones) in a small bowl. Cut up meat. Brown meat in a little oil on medium heat. Stir every so often. While meat is cooking cut up onions and peppers.  After meat has cooked a few minutes add your peppers and onions. Add the fajita seasoning and water. Stir well. If you like your veggies very well done and super tender cook for a few minutes stirring often before you bring to a boil. If you like them pretty firm immediately bring your fajita mixture to a boil after adding the water and seasoning. Boil for one minute and remove from heat. You can always cook the veggies longer, but don't let your meat get too done or it may make for some tough eats. This is why some like to remove the meat after a bit and then continue to cook the veggies. Sauce will thicken upon standing. Enjoy with your favorite toppings rolled into a warm tortilla. Mmm.

*If you don't have bouillon you can skip the water and substitute chicken/beef/vegetable stock instead. Please feel free to alter the spicy according to your taste buds. Also, have you noticed I like to skip mentioning things like measurements and equipment. I am so sorry if you have never cooked before and don't know some of these things that I take for granted. If I ever confuse you so much just leave me a comment. Don't be afraid to ask and I won't be afraid to answer ;)
