How do you take your coffee?

As you may know by now.....I heart coffee. Probably as much as I like to recycle ha ha. The big debate is do you flavor your coffee?

Some think that you are bold and mature if you take it black. I think it tastes horrible that way, but that is just me. Some think you might as well order some foo foo frappe or cappuccino if you like a lot of cream. I am not here to judge. Sometimes I'm feeling extra strong and light on the cream. Sometimes I want almost a milkshake lol. I have to say most of the time I prefer Hazelnut creamer (I think Coffee-mate is best, but will use another brand in a pinch.) Or during the fall season I LOVE LOVE LOVE Pumpkin Spice. That there is some good stuff.

Seasonal Sunday: Homemade Hot Fudge Sauce, Carmel Sauce and Butter Toffee!

I have two more delish recipes from the girls over at Our Best Bites. Hot Fudge Sauce and Carmel Sauce aka Buttermilk Sauce. I cannot put into words how tasty these two sauces are. I had a hard time not keeping it all to myself instead of giving it away as Christmas gifts.

Hot Fudge Sauce

Go get it:

14 oz. can sweetened condensed milk
1/4 cup butter (I like to cube mine for this recipe)
1/2 cup dark or semi-sweet chocolate chips

Go make it:

 Pour condensed milk into small saucepan. Add chocolate chips and butter. Melt over medium heat until combined. Stir occasionally. Ta da. That's it!! It is sooo good. Pour into small jars for gifts or eat it all yourself over ice cream on family movie night. Once this cools it will thicken like fudge. You just need to microwave it to get it all melty again. This needs to be refrigerated. If giving as a gift it will keep overnight fine, but after that it needs to stored in the fridge. This recipe made two half pint jars (or one pint).


Carmel Sauce (Buttermilk Sauce)

Go get it:

3/4 c. buttermilk
1 1/2 c. sugar
1 stick real butter
2 Tbsp. corn syrup
1 tsp. baking soda
1 tsp. vanilla

Go make it:

Combine buttermilk, sugar, butter, corn syrup and baking soda in a large pot. It will get super bubbly so plan ahead with the large pot. Bring those ingredients to boil. Once boiling reduce heat to low (still bubbling, though) for 8-9 minutes. Stir often.

It's ready when it is golden brown in color. Remove from heat and add vanilla. You will want to skim off the foam or if it doesn't bother you just stir it in. Store in the fridge. Makes a great gift too. This recipe made one pint jar.



My last recipe is yum yum to die for. I mean a whole pound of butter....what's not to love?! Am I seeing a diet in 2011? LOL. I found it over at The Pioneer Woman. LOVE everything about Ree.

Lia's Butter Toffee (for the most part)

Go get it:

16 ounces, weight Butter, Melted (4 sticks/cubes)

16 ounces, weight Granulated Sugar
3 ounces, fluid Water
1 teaspoon Salt
1 teaspoon Vanilla Extract
16 ounces, weight Chopped Topping: Toasted Nuts, Candy Canes, Sea Salt, Etc.
24 ounces, weight Tempered Dark Chocolate For Coating, Melted

Go make it:

Combine butter, sugar, water, and salt in a saucepan. Bring to a boil, stirring constantly.

Cook over moderate heat, stirring, until candy thermometer registers 298 degrees. Do not walk away. Keep on stirring. Mine was done before it hit 298. So really watch the color and smell. We don't want a burnt smell. If there is the slightest burnt smell that is how your toffee will taste. Remove from heat and stir in vanilla until well combined.

Pour the mixture onto a silicone baking mat or good parchment paper. Use a heatproof rubber spatula or offset spatula to spread quickly before the toffee sets. Spread t.o your desired thickness. Some like it thin and some like it with quite a bite.

(You can't tell, but this plate is soo cute with lots of snowmen.)

Allow toffee to cool completely. Blot to remove excess oil from the surface if needed (this helps chocolate stick better). Now you can take a few different routes here. You can coat surface with half of the melted chocolate and immediately sprinkle with topping. When chocolate has totally set, carefully flip over (it’s okay if it falls apart a bit) and coat other side with the rest of the chocolate. Sprinkle on topping. Or you can just coat one side and sprinkle with choice of topping. Or candy shop style you can break the toffee into pieces and dip into chocolate. Then roll in finely chopped nuts or sprinkle with other toppings. Store in an airtight container.

Seasonal Sunday: Homemade Marshmallows.

I was so excited to find yet another yumm-o recipe from the girls at Our Best Bites. Today we are making marshmallows. I only sort of like marshmallows that some out of a bag. I'll admit that before this recipe I had never even tried a real marshmallow. If you aren't a marshmallow lover, or even liker, I advise you to try one. And I bet one will turn into two or three depending.

Homemade Marshmallows




Go get it:

3 packets unflavored gelatin

1 C ice water, divided
1 1/2 C sugar
1 C light corn syrup
1/4 teaspoon kosher salt
1 teaspoon vanilla extract
1/4 C corn starch
1/4 C powdered sugar (oops not in the picture above)

9 x 13" pan
non stick spray

Go make it:

1. Pour packet of gelatin into stand mixer bowl. The girls advise you don't use a hand mixer unless you carry some sort of insurance on it lol. Add 1/2 cup of your ice water to gelatin. Gently stir to dissolve.

2. Add corn syrup, sugar, other 1/2 cup of ice water, and salt to a small heavy bottom sauce pan. blend ingredients. Bring to a boil. Lower heat and simmer until you have reached 245 F. A candy thermometer is real handy here unless you have super powers. And if you don I am making candy with you next year.  Once you hit 245 F remove pan from heat.

3. Pour hot mixture slowly into your bowl containing gelatin. Mix on low. After all the mixture is in the gelatin bowl turn mixer to high. Beat for 12-15 min. This is where a stand mixer comes in handy. Add the vanilla during the last couple of minutes.

4. Prepare pan by spraying with cooking spray. Don't forget to do up the sides. Mix corn starch and powdered sugar in a small bowl. Pour into greased pan. Tap out excess and save.  
5. Once marshmallow mixture is super white and fluffy and gorgeous spoon into prepared pan. Use a greased spatula. Smooth with spatula or the back of a greased spoon. I will be honest, it will put up a fight. See the picture below. That's where I drew the line with my sanity. The bowl did not get scraped clean. Nowhere close lol. Let sit at room temperature for an hour or so. You want a nice dry layer to form. Sprinkle remaining cornstarch/sugar mixture on top (If you have lots left you should save it for later to dust your work space and marshmallows). Then cover in plastic wrap and let sit overnight. These could be ready in less time, but the girls (This is Sara and Kate. I refer to them as 'the girls.' Kind of like my personal chefs. Hee hee) recommend longer is better.

6. Once enough time has passed plop the marshmallow 'sheet' out of the pan onto a Silpat, large cookie sheet or counter. You will notice the bottom is perfect and smooth. You may want to make this the top of your marshmallows. You can either use tiny cute little cookie cutters (not that I would judge if you wanted monster size marshmallow treats....),  sharp knife or a pizza cutter to cut. I settled on a tiny star, snowflake and candy cane cookie cutters and an over sized pizza cutter (no that is not a cookie cutter shape!). The remains I cut up with kitchen shears to keep for myself. The rest will be gifts. Dust cut marshmallows with remaining cornstarch/sugar mixture to prevent sticking together. Store in an airtight container. Will keep for a couple weeks if stored properly.
*Note: If planning on dipping marshmallows in chocolate you may want to only try to tap off excess powder or chocolate will have a hard time sticking. You could always go the drizzle route like Sara did. Just go slow and keep at it. What's not better than a marshmallow dipped in chocolate? Oh my!

Lucky me!

There has been a loss in the family. Sort of.....

Now before you ask for memorial information don't be too alarmed. The family member I am referring to is my Toshiba Satellite Laptop. Yes, you read that right. My laptop.

My two year old son murdered my computer. It wasn't premeditated, but more of manslaughter. Okay, that sounds really mean. He was being his total two year old self and reorganizing my fridge. What a guy. So as I was deal searching I set my laptop on my couch. I didn't want to shut it as I then have to type in a password blah blah blah. I go put my fridge back together. As I am walking back into the family room I witness the crime go down. He trips over the power cord. Laptop falls to the floor (I could have swore this happened in slow motion). Toddler toddles over laptop stepping on LCD screen. It appeared to melt before my eyes. The whole right side just turned all black and pixely and lack there of.

I stood there in horror. I couldn't really yell at him. I was mostly to blame. This wouldn't have happened to a closed laptop. Oh my poor baby (the laptop). What a short life you lived. I don't really consider it a part of my family, but it sure helped me learn how to save lots of money. So here I sit typing on my hubby's crummy netbook. My fingers are almost cramping from the tight specs. The keys aren't in the same spot and the space bar works when it wants to. I am soo sad. If I want to use a life size pc I need to go down the basement and use the desktop. Ugh! That means when the Punkin is napping or in bed. My hubby uses this netbook during the evening hours while he watches tv.  

Thanks for listening to me vent. I try not to vent so much on this here blog, but this has me down. We don't have money for this, but I am in no rush to buy one now. If I come into some money I'm buying a Kitchen Aid food processor. I'll just search less for deals and maybe not get all the crazy cool coupons that can come and go so fast.

Seasonal Sunday: To theme or not to theme? That is the question.

We put up one Christmas tree tonight. It's a smaller fake one and I hate that it is fake. It was going to be tossed out by a family member and I just couldn't see that happen so it's mine now. I am not a fake tree person, but that is not what this post is about. :)

Do you theme your tree? I like a theme. I feel like it makes my department store-esque tree better than yours. No, I'm kidding. But, I love taking out ALL of the ornaments and and searching for color coordinating bulbs, bows and other bobbles. I love having people comment on my overly coordinated tree. I feel bad that some think theirs isn't as nice. Just because it's the fun loving mish mash of every family ornament since 1972 instead. I rock those trees too. It's just that I love tedious. The kids prefer those to my anal red/gold, clear/silver/mirrored, green/red, green/white, white/green/red, silver/gold, all gold, all green, etc. etc. LOL. Want to know how anal I could be? I hate that some of my bulbs have silver tops (where you place the hook/hanger) and some are gold. I have to let some things slide....

So tell me, do you theme your tree (okay, I'm going to admit to you that every time I say 'theme your tree' I feel like I should be saying 'pimp your ride' instead. Or tree in this case!)? I can't decide what route I am going to take with our other REAL tree that will go up soon. Am I the only crazy out there that thinks this is a thing? Amuse me. ;)
